Pinchy's Lobster and Raw Bar

Forget everything you know about seafood restaurants and picture hosting a week-long seafood party, complete with inventive, properly composed dishes, sushi artists, live music, and craft cocktails. Our goal was to fill a niche that hadn't even existed yet: white-tablecloth-worthy seafood and sushi, hold the tired steakhouse vibe, insert hip hop with a side of graffiti art. Pinchy's operates in the Sevierville Tennessee and Boerne Texas markets, with our newest location in the works in Maryville Tennessee.

The Walnut Kitchen

Launch Hospitality acquired The Walnut Kitchen in 2025. Maryville is home to the DiBartolomeo Family, the founders of Launch Hospitality, and while we have historically built brands from the ground up, The Walnut Kitchen was an opportunity close to home and close to heart. Since acquiring it, we have made significant investments in space, people, and operational excellence, and it now serves as our most authentic artisanal craft restaurant.

Crusher Claw

Ahoy, ye sweet tooth swashbucklers! Behold a whiskey so bold it’ll give you a proper kick in the teeth with a side of sweet. Set sail on a bold whiskey adventure.

Developed originally as a Pinchy's only spirit, crusher claw is now available at all of our restaurants. Available in cinnamon and sea salt caramel and now making its way into the Tennessee market.

Hotel
Walton & Hull

Situated in the cozy downtown of Carthage, Tennessee the Hotel Walton and Restaurant Hull pay homage to regional traditions and a way of life long gone. First opened in 1904, The Hotel Walton has been a place of respite for travelers for over 120 years. Launch's reimagination of this Carthage tradition includes cozy, luxuriously appointed rooms and common spaces, while Restaurant Hull serves guests appalachian fare and craft cocktails supported by our connection to Caney Fork Farm and our on site stone mill bakery.
